Philosophy



Arai’s philosophy is based on the spirit of Japanese tea ceremonies, which take every encounter to be a unique, once-in-a-life­time occasion for each of their par­tic­i­pants. To honour such occasions, one should put one’s whole heart into the ex­pe­ri­ence.


Regardless of whether the encounter is lim­it­ed to this dinner – the host places a tremen­dous amount of thought into not just creating the meal but also the dining space. During the meal the guest and host respect one another and appreciate their presence. A cordial interaction between the host and the guests takes place in an amicable at­mo­sphere, where everyone feels com­fort­able.


In such a setting, boundaries between the host and the guests become blurred while personal back­grounds, positions, and areas of expertise become less important. What becomes important is the sense of con­nec­tion and respect for this mo­ment of to­geth­er­ness. A moment that one should enjoy, just like a Japanese tea ceremony, as a rare oc­ca­sion in a perfectly curated space. Arai only lives up to its phi­los­o­phy when time and space are united with the heart.

Omakase menu

Since its introduction to Japan more than half a century ago, Chinese cuisine has ex­pe­ri­enced an increasing specialization by Japanese chefs. Over the years, through in­te­gra­ting traditional Japanese techniques and utilizing local ingredients, the Japanese have de­veloped what Chūka Ryōri (中華料理) is today, a unique type of cuisine that is Chinese at its root but distinguished through its Japanese sensibility in flavour, pre­sen­ta­tion and menu com­po­si­tion. Headed by Chef Makoto Ishii, Arai is spe­cial­ized in an au­then­tic Chūka Ryōri cuisine.


The 10-course omakase menu at Arai con­sists of a selection of dishes that orig­i­nate from various re­gions of China. The menu varies seasonally, though cer­tain dishes may vary daily depending on the fresh in­gre­di­ents available.


We create our menus according to the clas­si­cal Chūka Ryōri concept. Accordingly, no veg­e­tar­i­an or vegan menus are available. Please contact us in case of special dietary re­quire­ments.
